You can and it is juicy and delicious!! I wait until they have whole chickens on sale for $.69/lb, rub it down with some spices and throw it in the crock pot. It feeds Dan and I for 2-3 days, depending on how big it is/what sides I make with it.
I recommend taking the skin off before cooking it, though, because the skin gets weird and slimy.
